For a richer flavor, consider adding a smoked ham hock or bacon to the pot during the simmering process. Remove before serving. If you prefer a smoother consistency, you can partially mash some of the beans with a fork or potato masher before serving. These beans can be made in a slow cooker. Simply combine all ingredients and cook on low for 6-8 hours, or until beans are tender. Adjust the amount of jalapeno pepper to suit your spice preference. Removing the seeds and membranes will reduce the heat. Leftover beans can be stored in an airtight container in the refrigerator for up to 5 days. Reheat gently on the stovetop or in the microwave.
