For a thicker chowder, mash some of the potatoes against the side of the pot before adding the half-and-half. To enhance the clam flavor, add a splash of dry sherry or white wine to the soup along with the clam juice. Avoid boiling the chowder after adding the cream to prevent curdling. Gently heat it through. Fresh thyme or bay leaf can be added during the simmering process to infuse a more complex flavor profile. Remember to remove the bay leaf before serving.
