Add the diced onion, celery, carrots, green bell pepper, and red bell pepper, along with a splash of vegetable broth (about 1/2 cup). Pour in the remaining vegetable broth, then add the dried split peas, cubed sweet potato, and bay leaf. Bring the soup to a simmer, then reduce the heat to medium-low, cover the pot, and let it simmer for approximately 40-45 minutes, or until the split peas are tender and begin to break down.

Carefully transfer approximately half of the soup into a blender or use an immersion blender directly in the pot. Blend until smooth and creamy. Return the blended soup to the pot and stir well to combine it with the remaining chunky soup.

Taste and adjust the seasoning as needed, adding more salt, pepper, or cayenne pepper to your preference. Remove the bay leaf before serving. Ladle the soup into bowls and garnish with freshly chopped green onion.

For a richer flavor, consider sautéing the vegetables in a tablespoon of olive oil before adding the broth.
If you prefer a completely smooth soup, blend the entire batch before serving.
To add a smoky depth, incorporate a teaspoon of smoked paprika along with the regular paprika.
This soup is even better the next day, as the flavors meld together beautifully. Store leftovers in an airtight container in the refrigerator for up to 3 days.
