Follow The Directions

01

Step

In a blender, combine milk, flour, eggs, melted butter, and salt. Blend until smooth. Allow the batter to rest for 15 minutes to allow the gluten to relax.

02

Step

Heat a 12-inch nonstick skillet over medium heat. Lightly coat with cooking spray. Pour 1/2 cup of batter into the hot skillet, swirling immediately to evenly coat the bottom. Cook for 2-3 minutes, or until the edges are golden brown and the crepe easily releases from the pan.

03

Step

Carefully loosen the edges of the crepe with a rubber spatula and flip. Cook for an additional minute, or until lightly golden. Slide the cooked crepe onto a plate and cover to keep warm. Repeat with remaining batter, lightly spraying the skillet between each crepe.

04

Step

In a separate skillet, melt butter over medium-high heat. Add shallots and cook until softened and translucent, about 2 minutes. Add spinach and cook until wilted, about 1 minute. Add the chopped chicken and stir to combine, heating through for about 3-4 minutes.

05

Step

Lay each crepe flat and spread 2 tablespoons of Brie cheese over half of the crepe. Top with the chicken and spinach mixture. Fold the crepe in half, then return it to the skillet. Heat for 1-2 minutes per side, or until the Brie is melted and gooey.

06

Step

Remove the crepe from the skillet and roll into a cone shape. Serve immediately and enjoy!

For the best flavor, use high-quality rotisserie chicken.
Feel free to experiment with different cheeses, such as Gruyere or Fontina.
Add a touch of Dijon mustard or a drizzle of honey for an extra layer of flavor.
Crepes can be made ahead of time and stored in the refrigerator for up to 2 days. Reheat gently before filling.
