In a high-speed blender or food processor, combine 2 cups of water, nutritional yeast, cornstarch, and deli mustard. Blend on high speed for 1 minute until well combined. Add the soaked and drained cashews to the blender. (1 minute)

Blend on high speed until the mixture is completely smooth and creamy, about 1 1/2 minutes or longer, depending on your blender's power. Ensure no cashew pieces remain for the best texture. (1.5 minutes)

Transfer the blended sauce to a medium saucepan. Cook over low heat, whisking constantly to prevent sticking, until the sauce thickens to your desired consistency, about 5 to 7 minutes. (5-7 minutes)

If the sauce becomes too thick, add more water, a tablespoon at a time, until you reach the perfect consistency. Season generously with freshly ground black pepper to taste.

For an extra smooth sauce, use a high-powered blender and soak the cashews for a longer period, even up to 30 minutes.
Adjust the amount of nutritional yeast to taste. More yeast will result in a stronger 'cheesy' flavor.
Experiment with different mustards! A spicy brown mustard or even a touch of Dijon can add a unique twist.
This sauce can be stored in the refrigerator for up to 3 days. Reheat gently over low heat, whisking frequently, and adding a splash of water if needed.
