Combine the pineapple-infused gold Barbados rum, fresh lime juice, and orgeat syrup in a cocktail shaker filled with ice. (2 minutes)

Double strain the mixture through a fine-mesh sieve into the chilled coupe glass to remove any ice shards or pulp. (1 minute)

For the best flavor, use freshly squeezed lime juice.
To make pineapple-infused rum, combine chunks of fresh pineapple with gold Barbados rum in an airtight container and let it infuse for 2-3 days in the refrigerator. Strain before using.
If you don't have orgeat syrup, you can substitute with a small amount of simple syrup and a few drops of almond extract, but the flavor will not be quite the same.
Adjust the sweetness to your preference by adding a touch more orgeat syrup or simple syrup, if desired.
